My Little Dinner Tip

One of the problems with dieting is that I am a firm believer that I make ONE meal for dinner.  I also don't think it's fair that my kids have fish and brown rice every night for dinner (but they do willingly eat it weekly), I want a good variety, including things like spaghetti pie or macaroni and cheese.  Kiddie stuff too.

SO, my strategy is this.

Make the recipe of the item your kids want, and then split it into 2 casserole dishes (this, obviously works best with a casserole) and put one in the freezer, cook the other one and then have a giant dish of veggies/salad with it.  THEN, you also have that dish to have again in an emergency (or you can give it away to a friend who might need it).  It's the best of all worlds. :)

Tonight we had Spaghetti Pie (it's like spaghetti with sausage and pepperoni mixed in, topped with mozzarella cheese and pepperoni, to look like a pizza kinda) and I had a big tray of roasted Brussel sprouts with it.

That way everyone's happy and eating well. :)
